500° Eye Round Roast



I made this according to the recipe salting and peppering the roast fairly heavily.

I timed it to be done at 7:00 PM but my wife didn't show up until 9:00.

I had left it in the oven the whole time without opening the door. Suprisingly it was moist and tender somewhat on the rare side but cold. It had a very nice taste and even my wife liked it.
